Cook udon noodles according to package instructions, then drain and set aside.In a pot, add water, diced chicken breast, sliced carrot, potato, and onion. Bring to a boil and let it simmer until vegetables soften.Add curry roux cubes to the pot and stir until fully dissolved and the sauce thickens.Prepare sushi rice by mixing cooked rice with seasoned rice vinegar, sugar, and a pinch of salt.Place a nori sheet on a bamboo mat, spread sushi rice evenly on top, and add a slice of cooked tamago in the center.Roll the sushi tightly, then slice into pieces.Optionally, use a kitchen torch to lightly sear the tamago on top of the sushi.
