Cut the baguette or crusty bread into 1/2 inch slices.
In a frying pan, heat a little olive oil over medium heat. Add the sage leaves and let them cook for 1-2 minutes, until crispy. Remove from the pan and set aside.
In the same pan, cook the bacon slices until crispy, then remove them from the pan and let them drain on paper towels.
Assemble the snack bites by placing the crispy bacon and sage on top of the slices of bread.
Optional: sprinkle each bite with some grated Parmesan cheese.
Bake the assembled snack bites in a preheated oven at 350°F (180°C) for 5-6 minutes, or until the cheese is melted and the bread is crispy.
