Season the ribs with adobe spice mix, cumin, salt, and pepper. Set aside for 15 minutes to marinate.
In a large skillet, heat olive oil over medium heat. Add garlic and onion, sauté until onion becomes translucent.
Add marinated ribs to the skillet and cook for about 4-5 minutes on each side until browned. Once cooked, remove the ribs and let them rest for a few minutes before cutting into small pieces.
While the ribs are resting, add the beans, carrots, and tomatoes to the skillet. Cook for about 10 minutes, until the carrots are softened and the tomatoes release their juice.
In a separate pan, warm the tortillas.
Assemble the tacos by placing a few rib pieces, some bean mixture, and sliced avocado on each tortilla. Top with salsa and fold.
