Brush the seitan steak with a bit of olive oil and season with salt and pepper on both sides.
Heat a grill pan or skillet over medium-high heat and cook the seitan steak for 3-4 minutes on each side or until it has nice grill marks and is heated through.
Prepare the creamy kale salad by combining the mayonnaise, Dijon mustard, apple cider vinegar, nutritional yeast, a crushed garlic clove, and olive oil in a blender. Blend until smooth.
In a large bowl, massage the kale with a bit of the creamy dressing to soften it.
Arrange the kale on a serving platter and place the grilled seitan steak in the center.
Garnish the salad with additional vegetables and sprinkle with pine nuts or seeds.
Drizzle the remaining dressing over the steak and salad before serving.
