1 cup grated carrots1 cup cooked rice1 fresh egg2 tbsp vinegar (for poaching the egg)Plain yogurtGround cinnamonSalt and pepper to tasteFresh parsley for garnish

Reheat the cooked rice if not warm. Mix the grated carrots into the rice and season with salt and pepper. Stir until well combined and heated through.Fill a saucepan with about 3 inches of water and bring to a simmer. Add the vinegar. Crack the egg into a small bowl.Stir the water to create a whirlpool and gently slip the egg into the center. Cook for 3 to 4 minutes for a soft poached egg.Remove the egg with a slotted spoon and drain on a kitchen towel.Serve the carrot rice in a bowl, top with a dollop of plain yogurt, and carefully place the poached egg on top.Season the poached egg with a pinch of ground cinnamon and garnish with fresh parsley.
