Hearty Vegetable and Bean Casserole
📝 Ingredients Needed:
- 2 cans of mixed beans
- 3 medium zucchinis, sliced
- 1 can of tomatoes
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 cup vegetable broth
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp oregano
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
👨🍳 Cooking Steps:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat some olive oil over medium heat. Add the onions and garlic and sauté until they are soft and translucent.
- Add the canned tomatoes, thyme, rosemary, oregano, salt, and pepper to the skillet and cook for another 5 minutes.
