🍲 Butter Chicken 🍲
📖 Ingredients Needed:
Oil
Butter
Onions, finely chopped
Cashew nuts
Whole spices (e.g., bay leaves, cinnamon sticks, cardamoms)
Heavy cream
Tomatoes, diced
Kasuri Methi (dried fenugreek leaves)
Chilli powder
Turmeric powder
Ginger garlic paste
Garam Masala
Khus Khus (poppy seeds), optional
Kashmiri Chilli, dried
Salt, to taste
Ketchup, optional for sweetness
👩🍳 Cooking Steps:
- Heat oil in a pan, add the whole spices and sauté until they splutter.
- Add butter and onions, and cook until the onions turn golden brown.
- Stir in the ginger garlic paste and cook for a couple of minutes.
- Add the diced tomatoes, salt, turmeric, chilli powder, and cook until the tomatoes are soft and the oil begins to separate.
- Blend the cashew nuts with some water to make a smooth paste and add to the pan.
- Add ketchup if using, for sweetness, and cook the mixture until it thickens.
- Pour in the cream and add the kasuri methi, crushing it between your hands to release more flavor.
- Add garam masala and khus khus if using, mix well, cooking for a few more minutes.
- For a smoky flavor, you can hold a piece of lit charcoal over the curry and drop a bit of oil on it to produce smoke, then cover the pan for a minute.
- Garnish with coriander leaves and serve with naan or rice.
