Recipe:
🍲 Chicken Congee (Rice Porridge) 🍲
📝 Ingredients Needed:
- 1 cup white rice, preferably jasmine or short-grain
- 8 cups of water or chicken stock
- 1 pound boneless, skinless chicken breast
- 1 piece ginger (about 2 inches), peeled and sliced
- Salt, to taste
- Optional garnishes: sliced green onions, fried garlic, chopped coriander, soy sauce, sesame oil, and white pepper
👩🍳 Cooking Steps:
- Rinse the rice several times until the water runs clear.
- In a large pot, combine the rinsed rice and water or chicken stock. Bring to a boil over high heat.
- Once boiling, reduce heat to low. Add the sliced ginger and chicken breast to the pot.
- Simmer on low, partially covered, for about 1.5-2 hours. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
- Once the rice has broken down and the porridge has a creamy consistency, remove the chicken breast.
- Shred the chicken breast with forks and return it to the pot. Season with salt to taste.
- Continue to cook for another 10-15 minutes.
🍴 Serve and Enjoy!
- Ladle the congee into bowls and garnish with your choice of optional garnishes.
- Serve hot, and feel free to add soy sauce, sesame oil, and white pepper according to your preference.
