Asparagus and Cheese Bites
📝 Ingredients Needed:
- 1 bunch of asparagus
- 2 cups of shredded cheese (your choice, e.g., cheddar, mozzarella)
- 3 large eggs
- 1 cup of breadcrumbs
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of garlic powder
- Butter or oil for greasing
👨🍳 Cooking Steps:
- Preheat your oven to 375°F (190°C).
- Wash and trim the ends of the asparagus spears.
- Blanch the asparagus in boiling water for 2 minutes, then transfer to an ice bath to stop the cooking process.
- Chop the blanched asparagus into small pieces.
- In a mixing bowl, beat the eggs and mix in the salt, black pepper, and garlic powder.
- Add the asparagus pieces and shredded cheese to the egg mixture and stir to combine.
- Grease a mini muffin tin with butter or oil.
- Spoon the mixture into the muffin tins, filling them to the top.
- Sprinkle breadcrumbs on top of each bite.
