Peel and slice the sweet potato into ½-inch thick rounds.
Boil a pot of water and cook the sweet potato slices for 8-10 minutes, or until tender. Drain and set aside to cool slightly.
Spread butter on one side of each bread slice.
Place a layer of lettuce on the buttered side of one bread slice, followed by a few sweet potato slices, and more lettuce. Season with salt if desired.
Top with another buttered bread slice, buttered side facing the filling. Repeat for remaining bread slices and ingredients.
Optionally, toast the sandwiches on a pan to enhance crispiness.
