👩🍳 Cooking Steps:
Crack the eggs into a bowl and whisk well, adding a pinch of salt and pepper.
In a non-stick skillet, melt the butter over medium heat.
Add the lobster meat to the skillet and cook for 1-2 minutes, until heated through. Remove the lobster and set aside.
Pour the whisked eggs into the skillet and cook until just set, lifting the edges gently to allow the uncooked egg to flow underneath.
Once the omelette is mostly set, sprinkle the cooked lobster and cheese (if using) evenly over one half of the omelette.
Using a spatula, carefully fold the other half of the omelette over the lobster and cheese to enclose the filling. Cook for another 1-2 minutes to fully set the omelette and melt the cheese.
Transfer the lobster omelette to a plate and garnish with chopped chives or parsley if desired. Serve immediately.
